mint chocolate kiss cupcake

Minty fresh! These are mint chocolate kiss cupcakes. They contain a generous dose of peppermint extract, tons of crushed mint Oreos, a bit of green food coloring, and a "surprise" Hershey's milk chocolate kiss center. And the combination is divine, they taste like mint chocolate chip ice cream cake when you freeze them. Super fun to make, too.

I am in a serious cupcake-baking frenzy right now; don't know what it is. I like the idea of reinventing classic foods/drinks and channeling them into a cupcake recipe. How do piña colada cupcakes sound? Caramel apple? Strawberry cheesecake? They will become reality. Ahem, in the not-so-distant future...

    COOL!

    Unfortunately, I'm not a fan of peppermint extract.. it tastes a lot like toothpaste to me :( so sad, as I'm a fan of mint and mint chocolate chip ice cream and mint oreos and peppermint patties and all.
